A Very Crossover Thanksgiving

Thanksgiving is the unofficial start of the holiday season and while everyone is preparing to get their dishes ready for Thanksgiving Day, we thought we might share some delicious burger ideas, inspired by everything Thanksgiving. Executive Chef Marina really knocked the ball out of the park with these burger builds, and we can’t wait to sink our teeth into them! These burgers can also spark a conversation about sustainability, reminding us to be thankful for everything we have.

From left to right in their Sunday best:

 

Arnold - Crossover Chicken + Pork Blends on a seeded bun with spinach/arugula mix, melted gouda, a slice of granny smith apple, caramelized onions and truffle slices from a jar.

 

Betsy - Crossover Chicken + Beef Blends on a pretzel roll with spinach/arugula mix, melted cheddar cheese, a slice of granny smith apple, caramelized onions and maple glazed bacon.

 

Manny (the ultimate Thanksgiving burger!)- Crossover Chicken + Pork Blends on a brioche bun with slices of brie, stuffing and cranberry sauce.

 

If you’re too busy getting ready for the big day, Chef Marina suggests these burgers as the perfect Thanksgiving inspired dinner solution to keep the Thanksgiving vibes going! “They all taste delicious, but the truffle one is my favorite”. Your Thanksgiving leftovers and sides also won’t go to waste “Ran out of turkey? No problem! Use up those sides on a Crossover burger” - Chef Marina says


 Here’s the recipe for the amazing stuffing Chef Marina made for the “Manny” burger, that will make everything 1000% better. 


What you’ll need

12 thick slices or 1 lb of country style white bread 

1 stick unsalted butter 

3 medium yellow onions, diced 

6 stalks of celery, diced 

1 TBSP dried thyme 

1 tsp dried sage, crumbled 

About 1 ½ cups chicken stock, preferably homemade, low sodium 

Salt and freshly ground pepper to taste 

 

Preparation

The day before you want to make the stuffing, lay the bread out in one layer to dry. If you forget, put them on a rack in a preheated 325 °F oven. And bake for about 25 minutes, until just dry. Remove from the oven and allow to cool while you move on to sauté the vegetables. 

 

Melt the butter in a large (12-14”) skillet over moderately low heat. 

 

Add the onions, celery and herbs to the pan and stir occasionally until the celery is softened, about 7-10 minutes. 

 

If your pan is big enough, add the bread and stock to the pan, otherwise transfer to a bowl and toss to coat in the broth. Adjust seasoning to taste, it should be assertive. 

 

Allow to cool completely. Can be made a day ahead.
